Seafood Pie

A meal for making in advance and freezing for family dinners on cold autumn nights


(Makes 4 portions)

2 1/2 lbs of mixed filleted and boned Cod, Salmon and Smoked Haddock

4 medium Onions chopped

1 pint of Chicken Stock (Oxo cubes will do)

1/4 lb of Butter (grated Cheddar Cheese optional)

2 lbs of mashed Potatoes

1/2 pint of Cream

2 teaspoons of Dill


Put butter and onions in large saucepan and sweat on low heat for 15 mins

Add all the chopped fish and dill

Add stock

Cook for 10 mins

Add cream and bring to a simmer

Remove from heat and spoon into baking dish

Coat with mashed potatoes

Grate cheese on top

Place on hot oven 180C, Gas 6 for 10 mins

Serve immediately or freeze in individual portions for up to 2 months
