Fillets Of Trout In Puff Pastry


Two Trout fillets(1 fish) per person skinned and boned

250g of Puff  Pastry rolled out flat

Salt & Pepper

1/2 Cup of Chives

1/4 Cucumber chopped

2 oz of Butter

1 oz of Olive Oil


Cook off the cucumber and chives for 1 1/2 minutes in a pan with the

butter and oil. Roll out the puff pastry on a floured board.

Place the trout on the pastry.

Put the cucumber and chives on the trout and top with the

other fillet of trout .

Close the pastry up and brush with an egg yolk .

Bake at 180 C ,  Gas mark 5 for 25 mins until golden brown .

Serve with fresh hollandise with chives mixed in

and new potatoes .

A sparkling chilled Rose would compliment the meal
