Fillets of Monkfish Ardennes


6oz of Monkfish per person cut into scallop sizrs

Soak 1/2 lb of chopped streaky rashers in 2 glasses of white wine over night

Sliced wild mushrooms

2 cloves of garlic

250ml Cream


Add the streaky rashers to a pan retaining wineand cook til almost brown

Add the sliced monkfish scallops, mushrooms and garlic and cook for 12 mins

Add cream and half the wine from the overnight soak of the rashers

Bring to a medium thick sauce

serve with rice pasta or salad

Ideal with a Muscadet sur lie
